Food for Thought

Welcome to the first entry is this new food blog, this Sept. 30th, 2020 at 11:16pm.

I hope you find some tasty and enjoyable.

Starting this off is a very simple treat you can most likely remember the recipe for. It only call for six ingredients, 100% Baker's unsweetened chocolate, heavy cream, coconut oil, vanilla, sweetener and salt.

One thing to keep in mind, unless I give a specific recipe, I work a lot on old school methods of taste and adjust with a pinch of this and dash of that, thus, sometimes I will be estimating when its a matter of taste.

For these keto friendly treats, and no, I don't have the nutritional facts, its simply a matter of mixing the ingredients together and then heating to melt the chocolate. You can do this in either a double boiler or simply in the microwave, which is the way I prefer. You do have to be a bit careful when melting the chocolate in the microwave.

1. Be sure to add all the ingredient at the beginning so they all warm together. If you melt the chocolate then add cold heavy cream, the chocolate will seize up and look like a chunk dry mud. If this happens, simply add a fat to it, like coconut oil, butter or something similar. Stir it in and it should smooth back out.

2. Microwave at short bursts then stir. Do 30 seconds to a minute at a time then stir. After about 2-3 minutes, the chocolate may still look solid, but give it some more stirring and the ingredients will combine.

3. I just discovered this with my last batch. If you want a softer inside, add some extra liquid, oil, butter, cream, and the center won't completely re-solidify.

The basic amounts to fill the molds shown above are:

(Again, these are just guesstimates)

2 packages of 100% Baker's unsweetened chocolate

1 Cup heavy cream

2 Tbsp vanilla

1/2 Cup sweetener (bakers chocolate is seriously bitter, so you will have to adjust to taste)

3-4 Tbsp Coconut oil

2-3 tsp of pink salt (salt will cut down the bitter on some stuff, like chocolate and coffee)

Add everything to a microwave safe bowl, nuke for about one minute, stir and repeat till you have a nice, smooth chocolate sauce. You can add more sweetener and oil at this point if needed. Then simply fill any molds you have and refrigerate or freeze for several hours. Yum.
